Gnocchi alla Romana
Ingredients for 4 people
1 liter of milk
2 pinches of salt
50 g of butter
250 grams of semolina
100 g parmesan cheese grated
2 egg yolks
Preparation
Heat up the milk whit 2 pinches of salt, once it starts boiling add
the semolina and cook it for few minutes at low heat (or it will burn)
till it gets dense (around 2 or 3 minutes).
Turn off the heat and add butter, half of grated cheese, yolks and mix it.
Lay down the dough on a piece of waxed paper, cover it whit another
piece of waxed paper and level it to 1centimeter and let it cool down.
Once it is at room temperature cut it with a wet glass in to many
discs and lay them in to a buttered hoven pan, cover it with the
cheese lefted and some butter.
Cook it in a preheated hoven at 180 celsius degrees for 15 minutes
then grill it for 5 minutes and eat while is hot.
Crêpes
Ingredients
1 egg
1 glass of flour
1 glass of milk
1 thea spoon of olive oil
Preparation:
In a big cup mix the flour with the milk, then add the egg, and olive oil.
Mix it very well till it is fluid.
Let it rest half an hour in the fridge.
Heat up a nonstick pan with some butter then pour some dough in the pan (! rounded scoop) let the crepe cook on both sides, then continue till the dough is finished.
At this point dress each crepe with jam, sugar or chiccolate as you prefer.
