Instead of going into the office this week, Troy went to the Grand Hyatt for meetings. This also included evening dinners and what else....a visit to Mirzam, the chocolate makers here in town. He learned all about bean storage & sorting, roasting, winnowing, grinding, resting, tempering and wrapping. Make sure you ask him all about it. I know he would love to explain the whole process.

After they toured the shop, they were seated at a large table and put to the test. They had different pieces of chocolate placed in front of them and needed to decided what kind and % they were. In order to accomplish this they needed to snap it, look at it, smell it and taste it.
Troy did not win, but had a great time with the group. He was given a suggestion not to come home empty handed and he did win at that.

Then the group went to a nice dinner by the Dubai Mall Fountains.

On Thursday when the meetings were over he went straight to the airport to meet me for our next adventure.
